Orange Seed & White Chocolate Muffins

  Makes
 

Zest of 1 orange

Juice of 1 orange

1 cup wholemeal self raising flour

1 pinch of salt

1 teaspoon baking powder

⅓ cup milk

¼ cup extra virgin olive oil

2 tablespoons honey

1 teaspoon vanilla extract

1.5 tablespoons poppy seeds

½ cup white chocolate chips


  1. Preheat the oven to 180 degrees celsius

  2. Grate the zest off the orange and set aside

  3. Juice the orange and set aside

  4. Add the orange juice, milk, extra virgin olive oil, honey and vanilla extract in a large bowl and stir

  5. In that same bowl add the wholemeal self raising flour, baking powder, salt and poppy seeds and fold until almost combined

  6. Add the orange zest and white chocolate chips and make sure everything is combined and mixed evenly through

  7. Using an ice cream scoop, measure the mixture into lined muffin cases

  8. Bake for 25-30 minutes or until a skewer that is inserted into the centre comes out clean

  9. Leave in the pan for 5 minutes and then transfer to a wire rack for 10 minutes to cool
