Lemon & Blueberry Banana loaf

  Makes 1 Loaf
 

2 large (3 medium) bananas, mashed

⅓ cup extra virgin olive oil

⅓ cup milk

2 tablespoons honey

1 teaspoon vanilla extract

2 cups wholemeal self raising flour

Pinch of salt

1 teaspoon baking powder

⅔ cup blueberries (fresh or frozen)

Zest of 1 lemon

Juice of 1 lemon



  1. Preheat the oven to 180 degrees Celsius

  2. Add the mashed bananas along with the extra virgin olive oil, milk, honey, vanilla extract and lemon juice in a large bowl and stir

  3. In that same bowl add the wholemeal self raising flour, baking powder, salt and lemon zest and fold until combined

  4. Add the blueberries into that same mixing bowl and fold until combined

  5. Pour the mixture into a greased loaf tin

  6. Bake for 45-60 minutes or until a skewer that is inserted into the centre comes out clean

  7. Leave in the loaf tin for 5 minutes and then transfer to a wire rack for 10 minutes to cool
