Banana Bread Muffins

  Makes 7
 

1 cup wholemeal self raising flour

1 pinch of salt

1 teaspoon baking powder

1/4 teaspoon cinnamon ground

1 pinch of nutmeg

1/3 cup olive oil

1/3 cup milk

2 teaspoon honey

1 small chia egg

1 teaspoon vanilla extract

2 large bananas (mashed)

1/3 cup raw walnuts (roughly chopped) plus extra for top



  1. Preheat your oven to 180 degrees Celsius

  2. Make the chia egg and set aside

  3. Mash the 2 bananas and set aside

  4. Roughly chop the walnuts and set aside

  5. Mix together the dry ingredients including the walnuts in one bowl

  6. Add the wet ingredients to the dry ingredients and gently fold 

  7. Using 1 tablespoon measure the mixture into lined muffin cases

  8. Sprinkle the extra chopped walnuts on top

  9. Bake for 25- 30 minutes or until a skewer that is inserted into the centre comes out clean

  10. Leave in the pan for 5 minutes and then transfer to a wire rack for 10 minutes to cool
