Apple Cinnamon Muffins

  Makes 8
 

2 pink lady apples cubed

⅓ cup extra virgin olive oil

½ cup milk

2 tablespoons honey

1 teaspoon vanilla

1 cup wholemeal self raising flour

Pinch of salt

1 teaspoon baking powder

1 teaspoon cinnamon


  1. Preheat the oven to 180 degrees celsius

  2. Cube the apples and set aside

  3. Add the extra virgin olive oil, milk,honey and vanilla into a large bowl and stir until combined

  4. In that same bowl, add the wholemeal flour, baking powder, salt, cinnamon and fold until combined

  5. Add in the cubed apple and fold until combined

  6. Using 1 tablespoon, measure the mixture into lined muffin cases

  7. Bake for 25-30 minutes or until a skewer that is inserted into the centre comes out clean

  8. Leave in the pan for 5 minutes and then transfer to a wire rack for 10 minutes to cool
