Turkish Meatballs

  Serves 4
 

1 carrot, grated

500g beef mince

1 tablespoon fresh parsley, finely chopped

¼ teaspoon garlic powder

1 teaspoon dried mint

2 teaspoons cumin

2 teaspoons Hungarian paprika

⅓ cup - ½ cup breadcrumbs**

½ cup extra virgin olive oil

Salt and pepper to taste



For the sauce:

1 tablespoon tomato paste

1 can chopped tomatoes

1 teaspoon dried oregano

1 medium onion diced

3 cloves of garlic thinly sliced



  1. In a large mixing bowl add the grated carrots, beef mince, parsley, garlic powder, mint, cumin, Paprika, breadcrumbs, extra virgin olive oil, salt and pepper until fully combined. **If the mixture does not bind, add some extra breadcrumbs

  2. Roll out the mixture into little balls (an icecream scoop or 1 tablespoon works best)

  3. Set the meatballs aside

  4. In a large pot heat some extra virgin olive oil on medium heat and brown the meatballs, making sure to turn them frequently

  5. Remove the meatballs from the heat and set aside

  6. In the same pot add the diced onion and garlic and cook until soft

  7. Stir through the tomato paste, can of tomatoes and oregano

  8. Add in the meatballs and simmer for 15-20 minutes or until the meatballs are completely cooked

  9. Serve with rice and broccoli
