Chicken & Silverbeet Massaman Curry

  Serves 4
 

1 chicken breast cut into strips

650g silverbeet washed and chopped

1 large carrot diced

1 tbsp extra virgin olive oil

1 can light coconut milk

½ jar Massaman curry paste

 

1 cup rice



  1. In a large pot add 1 cup raw rice and 2 cups water 

  2. Allow to boil. Then turn down to a simmer until all of the liquid is absorbed

  3. In a large pot add your extra virgin olive oil until pot is warm, add your chicken strips and carrot, and stir until cooked

  4. Add in your chopped silverbeet until it is wilted

  5. Stir through ½ jar of Massaman curry paste and your can of coconut milk

  6. Allow to simmer for 5-10 minutes

  7. Serve with rice
