beef & bean panaeng curry

  Serves 4
 

400g gravy beef cut into strips

330g frozen green beans

1 tablespoon extra virgin olive oil


1 can light coconut milk

½ jar Panaeng curry paste

1 cup rice




  1. In a large pot add 1 cup raw rice and 2 cups water 

  2. Allow to boil. Then turn down to a simmer until all of the liquid is absorbed

  3. In a large pot add the extra virgin olive oil until pot is warm, add the cut beef and stir until cooked

  4. Stir through ½ jar of Massaman curry paste and stir through

  5. Add the green beans and stir until cooked

  6. Add the can of coconut milk

  7. Allow to simmer for 5-10 minutes

  8. Serve with rice
