BBQ Chicken Skewers

  Serves 3
 

1 red capsicum, deseeded and cut into cubes

3 slices canned pineapple cut into cubes

2 chicken breasts diced

2.5 tablespoons clean BBQ sauce (I use this one)

1 tablespoon of extra virgin olive oil, plus extra for cooking




  1. Combine the chicken and bbq sauce in a large bowl until completely covered

  2. Cover with cling film and leave in the fridge for 20 minutes to marinade

  3. Thread 1 piece of chicken, 1 piece of capsicum, 1 piece of chicken, 1 piece of pineapple, 1 piece of chicken, 1 piece of capsicum, 1 piece of chicken onto a metal or bamboo skewer

  4. On another metal or bamboo skewer thread 1 piece of chicken, 1 piece of pineapple, 1 piece of chicken, 1 piece of capsicum, 1 piece chicken, 1 piece of pineapple, 1 piece of chicken

  5. Repeat this pattern until all of the ingredients are used up

  6. Cover the skewers with the extra virgin olive oil

  7. Heat a non-stick fry pan, or grill over medium heat with a drizzle of extra virgin olive oil

  8. Cook the skewers, for 8-10 minutes, turning halfway until cooked through and the chicken is not longer pink in the middle

  9. Serve with a salad or grilled vegetables
