Mint & Halloumi English Muffins

  Serves 1
 

½ avocado

3 leaves fresh mint, thinly sliced

½ teaspoon fresh lemon juice

1 egg

1 English Muffin

30g halloumi, sliced

 


  1. Mash ½ avocado, thinly sliced mint leaves and lemon juice in a small bowl until everything is combined and set aside

  2. Heat a non-stick fry pan with extra virgin olive oil on medium heat

  3. Crack 1 egg into the fry pan on one side, and the sliced halloumi on the other side for 2-3 minutes or until cooked to liking

  4. Split and lightly toast the English Muffin

  5. Once the English Muffin is toasted assemble with the avocado mix, halloumi and egg
