High Protein Avo Toast

  Serves 1
 

2 eggs

½ avocado

½ teaspoon fresh mint

2 slices (or 1 large homemade slice) bread

2 - 3 teaspoons cottage cheese

Salt and pepper to taste

 

  1. Fill a small pot with water and allow to boil

  2. Once boiled, gently place 2 eggs inside and allow to boil for 8 minutes

  3. In the meantime place the avocado, mint and cottage cheese into a small bowl and mash together until everything is combined

  4. Place the bread in the toaster and toast until desired cook is achieved

  5. Once the bread is toasted, evenly spread the avocado mixture on the toast

  6. Take the eggs off of the heat and peel under cold water

  7. Slice the eggs in half and place over the toast

  8. Add salt and pepper to taste
