Blueberry Muffin French Toast

  Serves 1
 

2 slices of bread

2 eggs

½ serving Vanilla protein powder

¼ teaspoon cinnamon ground

1 teaspoon vanilla extractPinch of salt

1 teaspoon milk

¼ teaspoon vanilla extract

3 tablespoons blueberries

 

To serve:

2 tablespoon of Greek yoghurt

1 teaspoon of honey (or maple syrup)

Extra blueberries for the top

 

  1. Add the eggs to a shallow bowl along with the milk, cinnamon, salt, vanilla extract, vanilla protein and whisk until evenly combined

  2. Dip 1 of the slices of bread into the egg mixture making sure to evenly coat both sides

  3. Heat a large non-stick fry pan on medium heat along with the extra virgin olive oil

  4. Place the bread on the hot fry pan and cook until cooked through and golden brown on both sides

  5. Remove the bread from the heat and place the cooked bread on a serving plate and evenly layer the blueberries on top

  6. Repeat this process for the other slice of bread

  7. Serve with Greek yoghurt, a drizzle of honey and extra blueberries
